Ingredients
- 1 leek, chopped
- 60-80g butter
- 2 rashers of bacon, chopped
- 1 fresh corn cob, kernels cut away from the cob
- 2 large potatoes, diced
- 450ml fish stock or water
- 400g Cooked-In-Bag Goolwa PiPiCo Pipis with the juice from the bag
- 1 cup curly-leaf parsley, loosely chopped
- ½ cup of thickened cream
Instructions
IMPORTANT: This recipe was created for use with Goolwa PiPiCo’s Pre-Cooked Ready to Serve 400g packs.
- Bring a heavy-base saucepan to a medium heat, add butter and sauté the leek
- Add chopped bacon and cook until slightly crispy
- Add corn kernels and cook until
- Add potatoes and stock cook until tender
- Add pipis, making sure to include all the juice in the packet
- Simmer until pipis are heated through
- Stir through the cream
- Serve and add parsley to garnish
